Maki is sushi made by rolling certain ingredients in seaweed. Maki sushi is generally wrapped in nori (seaweed) and is usually cut into six or eight pieces, which constitutes a single roll order.
Ura Maki is an inside out maki (rice outside, seaweed inside) usually called an iside out roll. The filling is in the centre surrounded by nori, then a layer of rice, and optionally an outside coating of some ingredients such as roe or toasted sesame seeds. One of our favourites is the Ura Maki combo with Salmon Salad, Tuna Salad and California roll.
Nigiri is rice with a topping, it is hand-formed by gently squeezing the ingredients together.
A thin piece of Nori is wrapped around a ball of rice in order to hold the topping in place.
Temaki is a hand roll, made by placing ingredients on a sheet of seaweed and then shaping it into a cone.
Chirashi contains a variety of fish, omelette and tofu ‘scattered’ over a bowl of rice.
